This version belongs to North Indian cuisine, especially Punjabi cuisine served in langars of gurdwaras. However, in the South they make a completely different wheat pudding with a transparent consistency. The consistency and thickness is similar to cornmeal pudding. I haven't published this recipe yet, but I plan to do so soon. I would also like to share some tips and advice for flour pudding recipes. First of all, it is very important to roast the flour with ghee. Mix well and cook slowly over low to medium heat. Burns or a strange odor may occur. Then I added the same amount of sugar and ghee as in the traditional recipe. You can easily reduce it according to your preference. Finally, I added cardamom powder to give it a fragrance. It can be easily refined by adding dried fruits and raisins.

First, add 1 cup of ghee to a large pot. Do not compromise on adding ghee as it will help you achieve the same consistency that is served in the gurdwara. Add 1 cup of flour and mix well to avoid lumps. Fry on low to medium heat. After 14 minutes, the mixture will be golden brown and fragrant. Keep stirring so the mixture doesn't burn. After 20 minutes, the mixture will gradually turn a deep golden color and the flour will be completely cooked. Put that aside. Next, take a pot and take 1 cup of sugar and 3 cups of water. Boil well for 2 minutes. Sugar syrup does not require thread. Pour the sugar syrup into the flour mixture and stir. Please be careful as it may explode. Add the flour and mix until the flour has absorbed all the water. Continue stirring continuously for 5 minutes to avoid lumps forming. Cook until the ghee separates from the edges of the pudding. Next, add 1/4 teaspoon cardamom powder and mix well. Finally, enjoy piping hot flour pudding or kada.
